The Passata La Doria is obtained only from the best tomatoes in the South suitably passed in a sieve with a very fine plot so as to avoid the presence of seeds and any trace of peel, and then cooked in a water bath as in the best Italian tradition. This results in a product with a creamy and homogeneous consistency and a naturally sweet flavor that adapts to any recipe that provides limited cooking times such as eggs, white meats and of course pasta sauces.
