Per questo, Ceresio 7 ha aderito al progetto <span style=\"color: #2828da;\"><a title=\"Sustainable Restaurants\" href=\"https:\/\/friendofthesea.org\/it\/standard-certificazioni-azienda-prodotti\/programma-ristoranti-sostenibili\/\" target=\"_blank\" rel=\"noopener noreferrer\">Sustainable Restaurants<\/a><\/span>, propostogli e offertogli dai suoi fornitori BERGEL e MAZARA FISH. Sustainable Restaurants \u00e8 l\u2019iniziativa lanciata da <span style=\"color: #2828da;\"><a title=\"Friend of the Sea\" href=\"https:\/\/friendofthesea.org\/\" target=\"_blank\" rel=\"noopener noreferrer\">Friend of the Sea<\/a><\/span>, standard leader di certificazione internazionale per prodotti da pesca e acquacoltura sostenibili, che seleziona e premia le realt\u00e0 che includono nel loro men\u00f9 uno o pi\u00f9 prodotti con tale certificazione.<\/p>\n<p align=\"justify\">La guida della cucina \u00e8 affidata allo chef Elio Sironi, i cui punti di forza sono: \u201c<b>semplicit\u00e0 esigente<\/b>\u201d, con la riscoperta dei grandi classici della gastronomia italiana, talvolta rielaborati per valorizzarne sapori e consistenza; <b>autenticit\u00e0<\/b>, tradotta con l\u2019impiego di alimenti controllati e certificati, cucinati nel forno a legna o sulla griglia a carbone, strumenti essenziali per trasmettere i sapori di una volta; e ultimo, ma non per importanza, <b>rispetto del cliente<\/b>, alla base di tutto il pensiero dello chef, il cui intento principale \u00e8 regalare momenti di piacere garantendo la totale sicurezza del cibo che prepara.<\/p>\n<p align=\"justify\"><b>\u201cBERGEL e Mazara Fish, distributori ittici storici di alto livello<\/b>, hanno proposto una scelta di prodotti ittici certificati sostenibili Friend of the Sea e ci hanno offerto di aderire, con un supporto fattivo importante. Abbiamo deciso di unirci ai Sustainable Restaurants \u2013 hanno dichiarato i titolari Luca Pardini e Marco Civitelli \u2013 perch\u00e9, per rendere unica la propria attivit\u00e0, soprattutto in un campo cos\u00ec competitivo come la ristorazione, si devono esprimere al massimo tutte le risorse di cui si dispone, e ci\u00f2 non riguarda solo la cucina o l\u2019architettura del luogo\u201d.<\/p>\n<p align=\"justify\">\u201cLa scelta di scendere in campo assieme a Friend of the Sea \u2013 ha continuato Edoardo Grassi, il terzo \u2018padrone di casa\u2019 &#8211; nella
