Porta Romana, via Tiraboschi, plastic free"},"content":{"rendered":"\n<p>Per una cena di sostanza ma d\u2019effetto, soprattutto se si ha voglia di spaziare dalla prelibata carne spagnola ai piatti di pesce della tradizione partenopea, il tutto condito con una spolverata di \u2018asiaticit\u00e0\u2019, in zona Porta Romana, a Milano, c\u2019\u00e8 un ristorante a dir poco <strong>Particolare<\/strong>. Una realt\u00e0, appunto, fuori dagli schemi, non solo nell\u2019ambito pi\u00f9 prettamente culinario ma soprattutto sul piano etico.<\/p>\n<p>La strada intrapresa dai tre soci, il manager Mino Traversi, il sommelier Luca Beretta e lo chef Andrea Cutillo, \u00e8 stata infatti quella di abolire la plastica all\u2019interno del ristorante, mettere asciugamani riciclabili nei bagni, utilizzare <strong>prodotti sicuri e controllati<\/strong> e farsi portavoce della <strong>lotta agli sprechi<\/strong> <strong>e all\u2019inquinamento marittimo e terrestre<\/strong>.<\/p>\n<p>Per queste motivazioni, Il Particolare entra a pieno titolo tra le file del <strong>Sustainable Restaurants<\/strong> di Friend of the Sea. Il progetto premia i punti di ristorazione che, servendo uno o pi\u00f9 prodotti certificati Friend of the Sea, contribuiscono alla protezione degli oceani incoraggiando l\u2019assunzione di metodi di pesca selettiva e rispettando i valori della responsabilit\u00e0 sociale.<\/p>\n<p>Parola d\u2019ordine: innovazione. La filosofia del locale prevede che ogni persona s\u2019immerga in un\u2019esperienza enogastronomica unica. Il menu \u00e8 in continuo mutamento, seguendo esclusivamente la<strong> stagionalit\u00e0<\/strong> e la vena creativa dello chef, che ama sperimentare e giocare con materie prime sempre pi\u00f9 ricercate e interessanti. E come ciliegina sulla torta, i vini pregiati, sapientemente selezionati dal sommelier, e i dessert al cucchiaio arricchiscono di note frizzanti e dolci il viaggio individuale del cliente.<\/p>\n<p>\u201c\u00c8 motivo di orgoglio \u2013 ha commentato Paolo Bray, Fondatore e Direttore di Friend of the Sea, lo standard di certificazione internazionale per i prodotti da pesca e acquacoltura sostenibili \u2013 sapere che una realt\u00e0 <em>sui generis<\/em> come Il Particolare, cos\u00ec attenta sia alla qualit\u00e0 dei cibi sia alla salute del pianeta, si schieri dalla parte del nostro Sustainable Restaurants, per garantire a noi stessi e ai nostri figli un futuro che possa continuare a essere <strong>amico del mare<\/strong>\u201d.<\/p>\n<p>Ad oggi, sono circa <strong>300<\/strong> i ristoranti che fanno parte del progetto Sustainable Restaurants.
