Nella Scuola Alimentare che tutela il mare e l\u2019ambiente"},"content":{"rendered":"\n<p>Nel cuore di Ortigia, a Siracusa, in un luogo considerato a tutti gli effetti la culla della Magna Grecia, dove l\u2019aria frizzante del mare Jonio rallegra fra i vicoletti gli animi di abitanti e turisti, sorge un ristorante che ha fatto dell\u2019ospitalit\u00e0 e del buon cibo locale le sue carte vincenti. <strong>Scuola Alimentare <\/strong>\u00e8 un vero e proprio fiore all\u2019occhiello nel panorama gastronomico della Sicilia sud-orientale.<\/p>\n<p><strong>La stagionalit\u00e0 e la disponibilit\u00e0 delle materie prime<\/strong> sono alla base di tutto ci\u00f2 che viene preparato in cucina, per offrire agli ospiti solo l\u2019eccellenza delle pietanze, sia in termini di gusto sia in termini di sicurezza. Una filosofia che ha portato il bistrot a far parte del progetto Sustainable Restaurants, i cui obiettivi fondamentali sono <strong>proteggere il pianeta e garantire ai clienti cibi sani, controllati e certificati<\/strong>.<\/p>\n<p>L\u2019iniziativa \u00e8 stata lanciata da <strong>Friend of the Sea<\/strong>, standard di certificazione per i prodotti da pesca e acquacoltura sostenibili, per individuare tutte quelle realt\u00e0, nazionali e non, nell\u2019ambito della ristorazione che promuovono i metodi di pesca selettiva, l\u2019abolizione del sovra-sfruttamento degli stock ittici e la tutela dell\u2019ambiente marittimo, scegliendo uno o pi\u00f9 prodotti certificati Friend of the Sea.<\/p>\n<p>Scuola Alimentare propone tecniche di cottura attente e tradizionali, sapori autentici e piatti \u2018elementari\u2019, ma nell\u2019accezione positiva dell\u2019aggettivo. La caratteristica onnipresente \u00e8 la semplicit\u00e0, quella che fa bene allo spirito e al corpo. Si decide sempre assieme allo chef\/titolare Carmelo cosa e come cucinare: il menu, infatti, non \u00e8 fisso perch\u00e9 si affida per filo e per segno alla natura, variando continuamente da un periodo all\u2019altro e spaziando, ad esempio, dalla pepata di cozze alle verdure appena saltate in padella, o ancora dall\u2019uovo fritto al polpo croccante con patate.<\/p>\n<p>\u201c\u00c8 davvero un onore per me \u2013 ha commentato Paolo Bray, Fondatore e Direttore di Friend of the Sea \u2013 poter vantare l\u2019appoggio di un piccolo grande angolo della nostra amata Sicilia, un reale <em>friend of the sea <\/em>che giorno dopo giorno manifesta il proprio contributo al progetto <strong>Sustainable Restaurants<\/strong>, perch\u00e9 ha capito che proteggere il mare significa salvaguardare noi stessi\u201d.<\/p>\n<p>Ad oggi, sono circa <strong>300<\/strong> i ristoranti che fanno parte del progetto Sustainable Restaurants.
